No ski trip is complete with out this wonderful chicken dish made by our son-in-law. Don’t be put off by the curry and spinach. It’s a great family dish even the youngest kids gobble it up.
Chicken Curry Florentine
2 boxes frozen chopped spinach
3-4 chicken breasts cut into strips (or tenders)
1/2 cup mayo
2 cans cream of chicken soup
1/2 tsp chili powder
1/2 tsp garlic salt
2-3 tsp curry powder
1 cup white wine
Grated cheddar or Monterey jack cheese
Rice or pasta
For sauce, combine mayo, soup, spices and wine.
Thaw spinach and spread across bottom on baking dish
Lay chicken over spinach
Pour sauce over chicken
Bake uncovered at 375 for 45 mins
Top with cheese, bake for 15 minutes more
Serve over rice or pasta
