Strawberry season is here. It’s such a treat to go to our nearby farmers market and get locally grown berries for all kinds of treats and several farms offer ‘pick your own patches.’ Here’s a fun Inn at the Westwynd Farm recipe that is not only easy, but looks pretty spectacular too … and it tastes so good!
20 whole large berries, hulled
8 oz cream cheese, softened
¼ cup confectioners sugar
¼ tsp vanilla or almond extract (I really like the almond)
2/3 cup finely chopped pecans
Directions
Cut a thin slice from the bottom of each berry so that they stand upright. Cut berries into 4 wedges, cutting almost but not through the bottoms. Fan wedges slightly taking care not to break them, Set aside.
In a mixing bowl, beat together cream cheese, sugar and extract until combined but still stiff. Using a teaspoon or pastry bag with decorative tip, fill berries, sprinkle with pecans. Cover and refrigerate until ready to serve.
