“I enjoy eating wholesome, real food so I try to incorporate as many nutritious foods in one recipe. I use organic items as often as possible. I use the steel cut oats as they are less processed. All of the add- ins have a nice amount of fiber and will keep you satisfied until lunch!”
Sounds good to us! A hearty and nutritious breakfast is so important. Here’s how to make this ‘Breakfast Delight’!
Prepare the night before:
- 2 Cups steel cut oats in a large pot
- 4 cups boiled water
- ¼ -1/2 cinnamon
- ¼ tsp salt
- Dried fruit: raisins, dried cherries
- Put a lid on pot and let this soak overnight
In the Morning:
- Cook for about 5-10 min and stir often. You may need to add more water.
- Add the following, then cover with pot lid, shut off the burner and allow the frozen fruit to thaw:
- ½ cup canned pumpkin
- Frozen blueberries
- Frozen raspberries
- ¼ cup Milk
- 2 TBSP organic unrefined coconut oil
- Add to the bowls:
- Sliced bananas
- Sliced strawberries
- 1 TBSP Peanut butter and/or Almond butter
- 1 TBSP molasses
Mix together and ENJOY!
Hint: Open a can of pumpkin and put tablespoon scoops of the pumpkin on a large plate and place it in the freezer. It freezes solid in a few hours or less. Take the plate out and in a few minutes, you can pop them off the plate and put in a freezer bag for more mornings of yummy oatmeal!
