Patti Barber loves to make this delicious soup for her family to enjoy on Sundays while watching football together. It’s perfect for any weekend gathering with family! The tortellini melts in your mouth when you eat the soup and if your family doesn’t like spicy food, substitute sweet sausage and add a few shakes of red pepper flakes to the soup.
Tortellini and Spicy Sausage Soup
3/4 of a pound of hot sausage removed from the casing
One small onion, grated
One large carrot, sliced thin
One yellow pepper, diced
One can of diced tomato, 14 ounces
32 ounces box of your favorite chicken stock (vegetable stock works too)
A large bag of cheese tortellini, 13 ounce bag
One bay leaf
Salt, pepper
In a large stock pot cook the sausage- Breaking up into small pieces as it cooks. When the sausage is fully cooked add the grated onion and carrots and cook until onion is translucent. Add the peppers cook for another minute. Add tomatoes and stock. Add Bayleaf and salt and pepper to taste. Simmer for about 10 minutes. Add the tortellini and cook until tender. Remove Bayleaf before serving.
